I like to hear original things particular to me. And not just about my looks or things I can't help, but about my accomplishments and the things I do and say. Like for instance, my husband once told me how it touched him to watch me care so sweetly for our dying pet.
He once said how beautiful I was when asleep.
I once heard that I have "soulful" eyes.
Just be sure the things you say are true, that you are sincere and mean what you say and they are not things you have heard from movies or things that you hear others throw around all the time.
You can sometime though, make a very simple statement with such emphasis that she will never forget it such as the time my boyfriend stopped the car, put it into park, took my hand and looked into my face and said "Do you have any idea just how much your smile breaks my heart?" Talk about melting. I knew he meant he thought I was pretty and that he wanted me to know it.
So just keep it simple, be yourself and mean what you say sweetie and you'll do just fine.

saying cheesy things like "...you're enchanting" works on me.
also when a guy randomly spills his guts on how he feels about me is also amazing to hear, even if we've been dating for a year.
the most impressive thing you could say is something sweet and honest.

Tell her honestly what you feel when you are with her. Nothing beats an honest remark...you could go on talking sweet things forever when you mean everything that you say.

Say something really sincere about how pretty she is... whatever you do... DO NOT SAY hot, sexy or DAMMMMMNNNN, because that is not charming... lol if you say "wow, youre really beautiful" that is sooo sweet...
