Mathew 12:10:20:06 - And a voice said unto them, do not eat of which runnith along-est the earth for four minus two is not desirable to your Lord, hence you will surely runnith a fowl unto your Lord and be banished from the earth and there will be screaming and gnashing of teeth.
You see what I mean - Sounds like chicken but nobody interpreted it that way..... there's lots of it in the Bible.

Here's how it works: the people writing the holy texts have certain limited medical knowledge, and forbidding certain types of animals is based on that.
If mad cow disease had hit us a few thousand years earlier, cows would have been forbidden to jews and muslims.
Of course, the hindus don't eat meat out of respect for all life; that's different.

If chicken was forbidden, you'd have to avoid all of those other foods that taste like chicken, too. You wouldn't be able to eat anything.

Good question, considering how filthy they can be when kept as barnyard animals!
My guess----nonpredatory birds, so ok (not too revolting) for food purposes.
And NOT necessary for agricultural/trade purposes---so there wasn't necessarily a reason to make them "forbidden", in order to keep them from being eaten up/wastefully killed or sacrificed.

the "spirituall " leaders love the taste of chicken soo much.
And also, its the only animal, most wide spread through the ages, even more so then buffalo.
if its most wide spread, then the leaders will think "dah, ok, its around so much, it must be good for us to eat it, god must want that."
then the ones around less, is thought of as bad to eat.

Pigs eat and wallow in their own waste, is the reason some religions don't eat them. Chickens are way cleaner in their habits.

The dietary laws were made when they didn't know any better. Our present day God concept came from people who thought that the Earth was flat. They were dummies.
