Holiday Star Cookies
Ingredients:
• 3/4 cup butter or margarine
• 2 large egg yolks
• 1 tbsp grated lemon peel
• 1 tsp vanilla extract
• 1/2 tsp almond extract
• Seedless red raspberry jam
• 1 pkg Duncan Hines® Moist Deluxe® Classic White Cake Mix (Any White cake mix will do!)
• confectioner's sugar
Baking Instructions:
1 Preheat oven to 375°F.
2 Combine margarine, egg yolks, lemon rind and extracts in large bowl. Beat at medium speed with electric mixer until well mixed. Blend in cake mix gradually; mix well.
3 Roll dough to 1/8-inch thickness on lightly floured surface. Cut half of the cookies with a 2 1/2 inch star cookie cutter and cut out the center of the other half with a 1 inch star cookie cutter. Place 2 inches apart on ungreased cookie sheets.
4 Bake 6 to 8 minutes or until edges are light golden brown. Cool 1 minute on cookie sheets. Remove to cooling racks. Cool completely.
5 Spread 1/2 teaspoon jam on tops of half of the cookies. Place remaining cut-out cookies on top of jam alternating points of stars of top and bottom cookies. Lightly sprinkle tops of cookies with confectioners' sugar. Store cookies in an airtight container.
Makes about 2 1/2 dozen cookies

Cake Mix Cookies
1 box mix for 2 layer cake (any flavor)
2 eggs
2 C. Cool Whip
powdered sugar
Preheat oven to 350 degrees F. Mix the cake mix, eggs and Cool Whip together; this will be "gooey" Drop by teaspoon into powdered sugar and roll into ball shape Place on a lightly greased cookie sheet 3" apart.
Bake for 10-12 minutes Let cool a little and put them on a wire rack.
This recipe is so good. You can add different kinds of nuts and anything else you like.

There's a real easy way...add the oil and eggs only from the directions. Mix that up, then drop by spoonfuls on the cookie sheet and bake. Sometimes there are recipes on the back of the cake mix boxes...AND there are some fantastic little paper back cook books for using cake mixes for other things!

There are tons of cookie recipes that use cake mix. These cookies are denser and thicker than your traditional cookie. They are a good change of pace. The link in my source has three examples. IF you search a little deeper you can actually find a ton on the recipezaar website

1 pkg. cake mix
1/3 c. oil
2 eggs
1 can frosting
Heat oven to 375. Combine cake mix, oil, and eggs until thoroughly moistened. Make into 1 inch balls and bake for 6 to 8 minutes. Cool for 1 minute and top warm cookies with frosting. Makes 3 dozen cookies.
Cake-n-bake cookies
1 pkg. cake mix
1 stick butter
1 egg
Mix ingredients thoroughly. Shape into 1 inch balls, or may be rolled out for cut out cookies. Bake on ungreased cookie sheet at 375 6 to 8 minutes or longer if needed.

I dont currently have any recipes for cookies made from cake mix (althought I think I will look this up later) but I *do* have a *great* recipe for lemon poppy seed cookies made with muffin mix! They come out sooo moist!! if you are interested in this send me an e-mial, I'll find the recipe and type it up for you : )

I know there is a Devils Food cookie made with cake mix. You might have to search for it on the internet though to find it.

My experience has not been very good, but I tend to like the chewy kind.
