Basil- it smells like summer, works well in Thai, American and Italian food, easy to prepare- fresh mozarella, tomatoes, and basil with oil, vinegar and black pepper. Fresh pesto with toasted pecans and pecarino romano. In stir fry with peanut sauce or in a boquet of edible flowers tossed in a fresh salad.

Rosemary- smells heavenly! Beautiful shrub that grow to be a bushy tree or some forms are creeping. It has these beautiful little purple flowers that can appear many times a year, depending on the plant. It works so well with roasted meats and veg, soups, stews, and sauces. It makes me very happy to go over and touch a rosemary and release those botanical oils making me smell good.

Lavander- Pretty flowers that smell really good. Use in iced tea, herbs de Provance, baked goods. Lavander shortbread is simple and different. Also really good in a good french roll recipe and dipped in salt water before baking.

Dill- Again, the smell! It works with pastas, meats, preserves and pickles. I really like dilled tomatoes and mushrooms roasted with beef, squash, and potatoes. It is also really nice in the edible flower salad.

Cilantro tastes like fresh. With beans and avacado on anything, in salads, in pho, in sandwiches, anything Mexican, anytime!

Lemon thyme.
Dill.
Bay leaf/laurel.
Does black pepper count?
Spearmint.
Rose geranium (if black pepper doesn't count). Rose geranium is *fantastic* in a strawberry sauce.

I feel bad that I can't include rosemary -- I really like it, but I never use it.

Oh, can I tack on fennel seed? That's great in Italian sausage. Or how about cumin?

dried turmeric, garlic, ginger, onion, cilantro, parsley, rosemary thai chilies. i agree with the person who said how can you just choose 5? i use the first 4 in almost every meat dish.
