Yes, and yes. Carrots convert to sugar, just as potatoes do. Check out information on the glycemic index on http://www.diabetes.org or http://diabetes.about.com. It will show you which foods are high on sugar / starch.

Carrots are not a starch. For every(I believe) 1/2 cup is 3 grams of carbs. For every 1/2 cup of potatoe is 15 grams of carbs. Potatoe,peas and beans,the dried kind are starches.

If you're referring to the glycemic index, you have to consider that the amount of sugar is only half the story. How fast it is absorbed by the body is just as important. Carrots are better for you than potatoes because it takes longer for the body to break down and absorb the sugars in them. And carrots contain more fiber, beta carotene and vitamin C than potatoes.

I checked the USDA nutritional database and compared raw carrots with baked red (skin on) potatoes. 100 grams of each. Carrots had 4.74 grams of sugar and 1.43 grams of starch. The potatoes had 1.43 grams of sugar and 15.15 grams of starch. Net, energy was 41 calories for the carrot vs 89 for the potato.

No, they are not a starch but they are high in natural sugar so you do not want to go overboard with them.

no I don't believe they are.......diabetics have to watch them though because they are kind of high in sugar, but I don't think its a starch......then again...green beans are. Sorry, that wasn't helpful was it?
