And I think there is another one, I'm not sure. Just a random thought I figured I would ask. By asking what these are exactly, I'm referring to basic terms without the word molecule. =)

mono is from plant fat is healthy for you, saturated fats from animals which is bad for you especially for your cholestrol levels and blood arteries, transfats are hyroden oils that are preserved and causes heart diseases or clogs heart arteries, polysaturated combination of very good fats that form in no preserves, plants and animals that doesn't have fat normally poly and mono doesnt last long. sat and tran does but bad for you.

There are only two broad types of fat - saturated and unsaturated.

Saturated fat has only single bonds between the carbon atoms.

Now unsaturated fat is divided again into three subtypes, which is why you were confused. These are
1. monounsaturated
2. polyunsaturated
3. Trans. Trans occurs naturally only in animal products (especially dairy) and even then in small amounts compared to artificially hydrogenated oils.

All unsaturated fats have one (mono) or more (poly) double bonds between carbon atoms.

The most stable fat is saturated fat. Stability decreases in the order
saturated > mono unsaturated > poly unsaturated > trans

You want a fat that is somewhere in the middle which is why olive oil is so good for you. If it's too stable, it sticks around forever. If it's too unstable, it oxidizes too easily and again contributes to clogging your arteries.
