Everything you buy at the store should have nutritional facts on the side of it with calories at the very top except for produce but you can find that online. You write down the number and servings you have and tally them up at the end of the day.

The average intake for a overweight woman is 1500-1800 calories

The average intake for an overweight man is 1700-2200 calories

The amount of calories you should take in is based on gender, current weight, and energy needs. Men naturally need more calories then women because we are made differently. If you weigh 300 pounds then your probably taking in over 3500 calories a day and can cut that slightly or by a lot depending on the rate you want to lose. If you are just a little overweight your probably taking 300-600 more calories a day then you should. If you are exercising often you need to take in more calories to meet your energy needs. Carbohydrates are you bodies main source of energy, remember that. To lose weight you just have to expend more calories then you take in.

Example:
A women who is a little overweight takes in 2500 calories a day. She decides to cut back her intake to 1800 a day while adding 30 minutes of cardiovascular exercise per day.

2500-1800= 700 calories cut a day. With the exercise she's expending an average of 300 calories based on the type of exercise and intensity. That is 1000 calories cut per day. If she keeps this up for a week.
1000 cals x 7 days= 7000 calories

3500 calories in a pound so 7000/3500 = 2 pounds lost in a week which is perfect because the recommened lose per week is 1 to 2 pounds. I wish you much luck and remember diets don't last forever, lifestyle changes do.

My coworker said she read a diet book that said to eat the amount of calories that equals your target weight * 100. If you want to weigh 100 lbs, then eat 100*10 = 1000 calories.
To lose weight in a healthy way, you should only lose 1-2 lbs per week. The best way to count calories is to keep a log.

You need to see a dietician or personal trainer. I don't think it is safe to do 1000 calories, or below without professional supervision.
