My muffins and cupcakes always seem to burn on the bottom, wondering if there are any tricks to keep this from happening

2 tricks... 1 place a shallow pan of water on the lower rack and bake cupcakes on the top rack. Or you can use a baking stone (pampered chef's medium round is my fav) the same way. Both keep the temperature in the oven more even. The water works better for muffins/brownies, than cake/cupcakes because it keeps them very moist making them difficult to frost.

Have you tried taking the rack in your oven up one level?

Another potential cause could be that your oven is running a little hot - get an oven thermometer and see if this is the case. Although, I suspect if it were running hot or cold, you would have noticed other problems, such as a cake being dry, or not rising enough ...

One thing you could try could would be to place the muffin tin on a cookie sheet - this will help diffuse some of the intense heat coming from the underside, and should help keep your bottom unburnt.

Set the rack lower in the oven.
Use an oven thermometer to make sure the temperature is exact. Use an older muffin pan, spray with PAM, (don't use papers) and check for done-ness with a toothpick a little before time is up.

In addition to checking your oven temp for accuracy I would take a long look at your pans. I had the same problem with the dark loaf pans. My banana bread was always too dark on the edges and bottom before the inside was done. I switched to lighter colored pans and the problem completely disappeared.

Try cooking at 300 instead of 350. Put them on the top rack and keep a close eye on them. If all else fails, have your oven checked. It may need to be regulated.

I would check your oven temp using an oven thermometer and try raising the rack a little away from the heat source!

Hi, Pam actually works very well. If you don't have any then base the container with butter and then put grease paper on the bottom ans round the sides.
