why do they burn heroine in a spoon?

Because they need to emulisfy it and get it to liquid form before injecting it. Also spoons are really easy to steel from restraunts and trying to melt it down on a plastic spork usually doesnt work.

To liquefy the heroin so it can be injected with a syringe.
