How many ways do you eat Spinach on a regualr basis.

Spanikopita (spinach pie) from our local Greek diner. The best! I'd make it myself but I simply cannot deal with phyllo (thin thin layers of dough).

Let me count the ways...:)
1. Wilted w/ onions in a little bit of oil or ff spray over rice.
2. Wilted (again) in quesadillas loaded w/ other veggies
3. Salad--I like to add Mandarin oranges and use the juice from the oranges then you don't need dressing.
4. Spinach quiche
5. Spinach dip
6. Creamed spinach

There is so much you can do w/ it...it's a powerfood

I have several recipes...
If tender fresh leaves, raw in a salad with crumbled crisp bacon, hard boiled egg, and toasty croutons

Cook, then drain and add a pot of cream and a pinch of nutmeg or two, then break 1 egg per person on the top, cover pan and allow to simmer until the egg whites.have congealed. Serve with a slice of ham. Thses are "EGGS FLORENTINE"

Boil, drain and cover with a bechamel sauce and grated swiss cheese, then bake until the cheese has browned slightly.

Cook 1 package of frozen spinach until tender, drain well. Sautée a sliced onion until transparent. Beat 4 eggs until frothy, add the cooked spinach, some salt and the onion, Place in a small frying pan with a little olive oil. and stir the center a few times si it starts to become firm. Shake the pan to avoid sticking. When nearly cooked, cover the pan with a plate a bit larger then the pan, flip`over and slide back into frying pan. Shake a few times again then cover and allow to finish cooking. It should come out looking like a one layer cake. Serve with a bowl of tomato sauce on the side...

Boil until tender, drain but reserve 1 glass of the cooking liquid.
Put the liquid, a pinch of nutmeg, salt and pepper, a pot of cream and a large piece of Feta cheese (about 300 grams) in a food processor. Purée all together then add the spinach and purée a few minutes more until you have a creamy, very thick sauce (if too thick add a little more cream or milk).Meantime cook some fusilli pasta or macarroni until al dente.. Cover with the spinach sauce, and serve with grated parmesan to taste.

Stuffed Mushrooms
Ingredients

2 large closed cup mushrooms
spinach
tomato
vegan cheese
mushroom pate
salt and pepper

Clean the mushrooms and remove the stalks.

Cut the spinach into small pieces and gently heat in a pan with a tiny bit of water until soft (alternately you can microwave or steam it).
Place a small amount of the spinach in the bottom of the mushroom. Place a thinly sliced piece of tomato on top (if you are using smaller mushroom cherry tomatoes work better) and grate black pepper on top then add a generous amount of mushroom pate.
Finally top with grated soya cheese and add salt.

Grill the mushrooms on a medium heat until golden brown. Serve with mayonaisse and a salad garnish.

I love raw spinach in salads. The only way I like it cooked was from this Thai place in Chicago that made spinach and garlic potstickers with a ginger soy sauce for dipping. Those were AWESOME!

I like to add it to scrambled eggs along with a slice of ham (cut into pieces), and small diced onion and pepper. I saute the ham, onions and peppers then add the eggs and the spinach last just before the eggs go solid. Delicious!

As a salad instead of lettuce with oil, vinegar, and lemon juice dressing. in pasta dishes with white sauce, like chicken florentine, on pizza, in quiche, in as many dishes as possible because I love spinach!

You can steam cook spinach or eat with your salads raw.
