Considering Mohammed supposedly wrote down what Allah was saying to him, if you believe in Islam you kinda have to go along with Muhammad as the prophet.

Very good question. Allah is a Moon God of Arabia, and salvation is found in complete surrender to Allah and his will. Muslim is one who submits, Islam is submission. Salvation is based on works. So human effort is critical in the Islamic view of salvation.
I do not know if they are Muslims if they do not believe that Muhammed is a prophet, because then Qur'an would not be a Holy Book either.

No, the difference between the bible and the Qur'an is that the bible has many authors, and the Qur'an is the revelation of Allah to Muhammad only. I don't think you can be muslim without accepting Muhammad as the prophet and messenger of God.
Well, technically, Abraham and Noah and Jesus didn't know Muhammad, and were muslims, but there's a difference between not knowing someone who came after you, and flat out rejecting.
But only Allah can judge a person's heart and sincerity, so this is only my opinion.

No, your not a muslim if you do not accept Muhommad (SAW) as your prophet. When a non-muslim converts to Islam, she/he must say Kalima Shahada when doing so. Laa Ilaha Illallah Mohammadur Rasoola Allah. This is translated to, there is no God but Allah and Mohammad (SAW) is his messenger. When a muslim dies, he/she must also say the kalimah at the time of death.

No, if you do that then you are not a Muslim and are not entitled to heaven.
A Muslim must believe in 6 things altogether, without exception. They are:
1) Believe in Allah
2) Believe in the Kitabs (the original Psalms, Torah, Bible, and Quran)
3) Believe in the Angels (Gabriel, Michael, Sarafiel, Azrael and others)
4) Believe in the Prophets (Adam, Abraham, Moses, Jesus, Muhammad and others)
5) Believe in the Day of Judgement
6) Believe in Qadr and Qada (pre-destination and the execution of the pre-destination).
Pre-destination exists because God does not have time as his dimention (He is timeless). And because He is timeless, He therefore has no past or present like we do. And because He lives in (our) past, present, and future, that is why He knows our future.
You need to believe all these to become a Muslim. Not believing in any one of them makes a person a non-believer.
Hope that helps.
