I like my Hot Dogs truly Chicago Style:
(1) I'm talking about an All-Beef Vienna Hot Dog. http://www.viennabeef.com/
(2) A fresh steamed S.Rosen poppyseed bun. http://www.thebestofchicago.com/productcart/pc/viewPrd.asp?idcategory=12&idproduct=62
(3) Gotta have mustard. Absolutley no ketchup. Some places in Chi-Town won't serve you if you ask for ketchup
(4) Raw diced onions
(5) neon green relish
(6) Sport Peppers
(7) Celery Salt
(8) Tomato
(9) A Pickle Wedge
For the absolute best hot-dog in the world go to Ira's in Northbrook, IL http://isfullofcrap.com/oldcrap/2005/09/iras.html

Southern style. Hebrew National, browned in a black iron skillet on a warm bun with yellow mustard, finely chopped coleslaw, chili (no, not the kind with beans), and fine diced onions. Occasionally, I'll add some Heinz Chili Sauce -- but just a little.
DeeeLicious!!! But---my wife won't allow me to have over one per month as long as I haven't had any other cold cuts.
Oh! Rats! I had a German bologna sandwich yesterday so no hot dog in December.
Oh! By the way, I worked for a sausage manufacturer when I was young and we made frankfurters. I know for a fact that we used choice meats and our facility was as clean as could be. We had USDA veterinarians in our plants (24/7) inspecting all our meats as they came in, our finished products, and they continually monitored our cleanliness standards. This, except for the Lance manufacturing plant in Charlotte, N. C. (cookies, crackers, treats, etc.) is the cleanest food manufacturing process I have ever seen.

Either kraut, or mustard. I really answered this, because I'd like to point out that, speaking as an amateur sausage maker, and knowing a professional sausage maker personally, the attitude of people who by mere hearsay believe that poor quality, rejected meat and offal are used. In fact, we use the better quality meats. Also, the industry is subject to government scrutiny. Also, if you'd visit a large sausage making plant, you'll see the workers scarfing down their own product at lunchtime. They know what is in there.

Well, I start with a veggie dog, which tastes the same, but with little to no fat. Then I fix it Chicago-style--mustard, tomato wedges, pickle, relish, onion, banana peppers, and celery salt on a toasted poppyseed bun. SOOO delicious.
