Never owned one, but I've been around several. I wouldn't recommend this breed for a pet. Imagine a high strung, small GSD. Not trustworthy around kids, and even when socialized, they seem to be jumpy and easily startled. Also all but one of the Malinois I've been around have obsessive behavior, such as pacing around the back yard.
It sounds like you've looked into this, and you want a loyal, single-person dog that is a protector of his flock (even the Bull Terrier, kind of), so if you know what you're getting into as far as having a dog, the GSD is your best bet.

I have never owned one myself but used to have a friend that did. They are more aloof that the GSD and not quite as friendly and quick to associate. Very intelligent and easily trained. Smaller and smaller boned than the GSD. I personally probably wouldn't go for one if I had a small child, but then again, I have never owned one. I am a thru-and-thru GSD lover. When I considered a breed I wasn't familiar with(my Doberman): I searched thru AKC.org for a local breeder. I e-mailed them. Spoke to some over the phone. Attend dog shows and when the owners/handlers aren't busy, they are usually very willing to give you some honest insight about the breeds. Before I bought my Doberman I spent about 2 hours at the breeder's home, playing with the puppies, meeting the "mom and dad" before I made my final decision. Any breeder worth dealing with will do their best to accomodate you in this. I hope this helps you in your decision.

I assume you've had hard to work with dogs before, all of them are strong willed and dominant. I would also suggest looking into the Dutch Shepherd

Or look into the Shiloh shepherd. Newzionshilohs.com, and shilohshepherds.org...only get a ISSR registered shiloh, they are the real thing. They are even tempered, very large, good health and good hips, great with kids, but will protect. They are similar to the GSD but breed to be the old style GSD from the 50's and 60's.

This is a very demanding dog. It needs an experienced owner and can easily be difficult to control unless the owner knows how to handle him. There can be wide differences in temperament and aggressiveness.
