I don't have a candy thermometer. I know that soft ball stage is to boil for 10 minutes.

Thanks for everyones answers. I looked in an old cookbook I had. You need to boil it for 25-30 minutes to get to the hard crack stage, if you don't have a candy thermometer.

I just made caramel popcorn today and it took about 5 minutes to reach the hard ball stage, which is 240 F. I guess a lot depends on how high the heat is turned up. I would think you could reach 240 in 10 minutes. The best way to check is to drop some of the candy into ice water and see if it hardens. Then you'll know if you've reached the right temp. Easy trick, get a glass of cold water, and drop a little bit of candy into it, and if it forms a hard ball, then you are done.

When 300 degrees registers on candy thermometer (hard crack stage).
