J'adore means "I love" or "I adore" in french. It is a conjugation of the verb etre (to be). "Je" means "I (as in me)" in french, and in this instance the "e" is dropped from the "je" in the phrase because the following word begins with a vowel, creating the contraction that you see. And yes, you can love fashion:)

j'adore means depending on the context "I love" or "I like".
In your sentence "j'adore fashion", the first mistake is that you forgot to add an article before the noun ( although here the noun is incorrect ) and the second one is that we don't really use fashion in French.
So it would be better to say : "j'adore la mode" or "j'adore être tendance"
