East Texas Brown Sugar Pralines
da 'BEAR says: These are my favorite praline: NOT chewy, but crumbly and melt in your mouth.

Ingredients
2-1/2 pounds light brown sugar
1 stick plus 3 tablespoons butter
2 teaspoons salt
12 fluid ounces evaporated milk
1 tablespoon of quality pure vanilla extract
1 pound pecans, small halves or pieces

Instructions
Combine nrown sugar, butter, salt, and evaporated milk in a large stockpot. Measure out and reserve vanilla and pecans. You'll have to work fast. Bring to the boil and cook until it starts to caramelize. Remove from heat and add vanilla and pecans, stirring in with a wooden spoon. Drop on buttered parchment-lined cookie sheets and cool. Store in airtight containers for up to 2 weeks. This has a short shelf-life, but you can easily halve the recipe. I've never tried freezing them.

This one uses sweetened condensed milk.

Ingredients:
Butter or margarine
1 cup granulated sugar
1 cup firmly packed light brown sugar
1 can (14 ounce size) sweetened condensed milk
3/4 cup butter or margarine
1/2 cup light corn syrup
1/8 teaspoon salt
3 cups pecan pieces
1 teaspoon vanilla extract
1 teaspoon almond extract

Directions:

Grease wax paper sheet with butter, then set aside. Combine sugar and next 5 ingredients in a large heavy saucepan. Cook over low heat, stirring gently, until butter melts. Cook over medium heat, stirring constantly, until mixture reaches soft ball stage (238 degrees F), about 15 minutes.

Remove from heat; stir in pecans and flavorings. Beat with a wooden spoon just until mixture begins to thicken. Working rapidly, drop by rounded tablespoonful onto prepared wax paper. Let stand until firm.

This one uses plain evaporated (condensed) milk.

Ingredients:
1 pound brown sugar
2/3 cup evaporated milk
1 cup pecans

Directions:

Mix sugar and milk in large microwave-safe dish. Stir until sugar dissolves. Add pecans. Cover with plastic wrap, making slits in the plastic to allow steam to escape. Cook in microwave for 6 minutes. Stir and return to microwave for 3 to 4 minutes. Candy should register 234 degrees on candy thermometer. Beat until thick. Drop by spoonfuls onto wax paper. Let it become firm before removing from paper.
