Grease. you mean shortening or oil I guess.
If it's old it can be rancid and ruin your food.
If it's still clear when hot and does not smell bad give it a whirl. But do a sample before you throw in the whole dish.

Are we talking grease, or oil, here? Grease from a good grade of bacon, or pork sausage would be ok and add more flavor
for browning--but only for a few days--and don't store out of
the frig.

Oils can be reused if they are high quality and depending on
the food that was prepared in them previously. When any oil
is heated to a high heat, the molecular structure changes and
it is chancy to cook with "used" for more than a couple times.

One person said that ALL oil is bad for you...This is definitely
wrong. Your body cannot live without oil but it must be certain
kinds. It gets too complicated to answer here, but the
body must have Omega 3/6 and 9 to be healthy. These are
called ESSENTIAL fatty acids (in the oils).

It is commonly done is restaurants. Usually the fryer is "cleaned" weekly at minimum and daily at best since it acquires the flavor of the food it cooks. The fryer is strained and the grease reused. You can strain the oil in cheesecloth to filter it when cooled.

Lard and some am\nimal fats can spoil over time.

You ask about GREASE rather than OIL... I've saved bacon fat in a tin-can, pop it in the fridge, and use a teaspoon for cooking eggs or browning beef for stew.

I know the health-nazis frown on this... reheating increases carcinogens, all fat is bad for you... blah blah blah.

I also save and filter the veggie oil that I use to fry chicken (only)... just tastes so good to re-use.

If it is in a deep fryer you can use it several times if you filter it to get the little bits of food out of it. I use a mesh strainer and paper towel. You have to filter it while it is still hot so it will easily pour through the paper towel. Coffee filters are good for this too. Restaurants use their oil for several days before changing because they filter it daily.

No, if it hasn't been used too many times. it actually cooks foods better when it is used.

it depends on what you cooked with it! if it was fish or chicken, i would throw it out! if it was fries or a vegetable, go ahead and use it a couple of more time!
