The middle finger means F*** you. The reason it is so offensive is that it resembles a penis. That is an old tradition of imitating genitalia with the fingers to make obscene gestures. Compare that to the "fig" made by inserting the thumb between the fingers in a fist. That is an archaic obscene gesture, the Renaissance equivalent of the middle finger. It is offensive because it resembes the female vulva.

I've always understood it as shorthand for "Shove it up your ***!"
The finger is what would go up the ***.
That's why you'll sometimes hear people say "Sit and spin" when they're giving someone the finger.
