1 cup evaporated milk
1/4 cup cocoa
1/2 cup peanut butter
1 tablespoon butter
DIRECTIONS
Butter one 9x9 inch pan.
Combine the sugar, evaporated milk and cocoa in saucepan. Stir over high heat until mixture comes to a rolling boil. Lower heat to medium and continue cooking to a soft ball stage.
Remove from heat, add peanut butter and margarine. Beat by hand until creamy; pour into prepared pan. Allow to cool and cut into squares.

4 1/2 Cups sugar
2 sticks real butter
1 can carnation evaporated milk (don't use a cheaper brand)
1 pkg real semi-sweet chocolate chips
2 cups miniature marshmallows (pack them down)
1 cup chopped nuts if desired
Butter a 13" X 9" pan
in a large pan, melt the butter, stir in the evaporated milk, add the sugar, bring to a hard boil, then turn down to a slow boil and stir constantly for exactly 11 minutes, no more, no less, keep stirring and don't leave the stove! take off heat and immediately add the marshmallows and chocolate chips, and stir just til everything is melted. (add nuts now, if you like them) Pour immediately into buttered pan, and chill. Let it come back to almost room temp and cut into pieces, layer with waxed paper so the pieces don't stick to each other. keep covered and refrigerated. Best dang fudge you ever ate.

1 bag of semi sweet chocolate morsels.
1 can sweetened condensed milk.
1 tsp vanilla extract.
1 cup or so chopped nuts (optional walnuts, almonds, or cashews are great).
Put the entire bag of chocolate morsels and the can of sweetened condensed milk inn a microwave safe bowl.
Nuke it on high in 30 second intervals. Stop when the chocolate is starting to melt. Stir until the melted chocolate and milk is completely mixed.
Add vanilla and nuts.
Put into a shallow square baking dish lined with wax paper.
Place in the fridge, in the freezer, or outside in the snow until the mixture hardens.
Cut into bite-size squares and feed 'em to people.

3 cups sugar
3/4 cup margarine
2/3 cup evaporated milk
12 ounces semisweet chocolate chips
7 ounces marshmallow crème (you can leave this out)
1 teaspoon vanilla
1 cup chopped nuts (optional)
Mix sugar, margarine, and milk in a heavy 2.5-quart saucepan until it comes to a full boil, stirring constantly. Continue boiling 5 minutes over medium heat or until candy thermometer reaches 234 degrees F. It's important to stir constantly to prevent scorching. Take off the stove and stir in chips until they're all melted. Add marshmallow creme, vanilla and nuts, if desired. Mix well. Pour into a greased 9x13-inch pan. Cool at room temperature, cut into squares and serve.

PERFECT FUDGE
2/3 c evaporated milk
1 2/3 c sugar
1/2 tbls salt
1 1/2 c small marshmallows
1 tbls vanilla
1/2 - 1 c walnuts
Mix milk , sugar, salt over low heat to boil. Boil & stir 5 minutes. Cool 5 minutes. Stir in other ingredients till smooth. Place in pan to harden.
Makes about 2 1/2 lbs of fudge.

Great recipes folks, Tip here, read the last thing in the recipes, cool to room temperature, DO NOT put it in the fridge, the humidity will react with the sugars and you'll have goo instead of nice creamy firm fudge

1/2 cup butter

1 12 oz bar sweet baking chocolate, chopped
2 1 oz squares unsweetened chocolate, chopped
2 teaspoons vanilla extract
1/2 teaspoon butter rum schnapps or amaretto
1 cup pecans, walnuts or macadamia nuts, chopped
Line a brownie-sized baking pan with wax paper or foil, covering sides of pan. Spray with non-stick spray or grease foil with butter.
Combine butter, sugar, and evaporated milk (do not use sweetened condensed milk) in a saucepan stirring over medium heat until butter is melted and sugar is dissolved.
While constantly stirring, turn to high heat and allow to reach a rolling boil. Once mixture is boiling, stop stirring and allow to boil for an additional 5 minutes, then remove pan from heat.
Stir in marshmallows; when melted, add chocolate and continue to stir until all is melted and well combined. Stir in flavorings (vanilla and butter rum or amaretto), then add chopped nuts.
Immediately spread mixture in the lined baking pan. Sprinkle with demerarra or colored sugar (optional).
Allow to cool at least one hour before cutting into squares for serving.

Go to the store and buy some KRAFT marshmallow creme. There is an excellent recipe for homemade fudge on the label. That is the recipe I use and everyone loves it.

1 stick unsalted butter
1/4 cup unsweetened cocoa powder
6 tablespoons buttermilk
1 pound confectioners' sugar
1 teaspoon pure vanilla extract
in a medium saucepan, combine the butter, cocoa powder and buttermilk over medium heat. Cook until the butter melts and mixture just comes together. Remove from the heat and whisk until smooth. Sift the confectioners' sugar into a medium bowl. Add the chocolate mixture and vanilla and whisk until smooth.
