I've heard the 7-year cellular change theory... and the aging taste-buds, but don't quite believe it.

I'm 40 + now, yet my tastes have stayed remarkably similar since about 13 or 14. I just don't eat as MUCH anymore !!

Capers are delicious !! And I have never cared for lima beans.

As you age your tastebuds decrease. You start to enjoy foods which you used to find unpalatable. Tastebuds are also jaded by spicy food, smoking and yoghurt so if you try these then you are less sensitive to harsh tastes like capers.

Taste buds die out as you get older. I like things now that I absolutely would not eat as a child.

It's called maturity which produces an understanding and appreciation of the delicate sub flavours that some foods have. Either that or your taste buds have become sh*gged with age.

The scientific explanation is that teenage girls are taught it is more polite to swallow than to spit, and by the time they are into their twenties they love to swallow so much they actively seek out this delicious nutitious flavour and texture.

Logically this open-minded attitude to flavours and textures carries over into their culinary tastes. How else can you explain why women like fresh oysters?

Not just our taste but our resistance to pain too. Our body and the nervous system that goes with it harden, and we start appreciating such things as biter tastes.
