"Swanson Turkey Noodle Soup Express" - Serves 4

2 (14 1/2 oz.) cans Swanson Chicken Broth
Generous dash pepper
1 medium carrot; sliced
1 rib celery; sliced
1/2 cup uncooked medium egg noodles
1 cup cubed cooked turkey

Mix broth, pepper, carrots and celery in saucepan; heat to boil. Stir in noodles and turkey; cook over medium heat 10 minutes or until noodles are done.

TURKEY SOUP

1-1/2 lbs diced, cooked turkey
3 medium turnips, peeled and diced
1 medium white onion chopped
4 slices center cut bacon, diced
1/4 lb pork sausage
1 - 12 oz can Great Northern Beans
1 - 12 oz can chicken broth (low sodium preferred)
1 - tbsp dried Herbes De Provence (sage, thyme, rosemary)
2 - tbsp olive oil (may need 1 to 2 tbs. more)
water

In dutch oven or large heavy sauce pan, add olive oil, bacon and sausage and saute at medium heat until browned. Add turnips and onions and continue to saute until turnips are softened and onions are translucent. (You may need to add a drizzle of olive oil as the turnips will draw moisture)
After the turnips and onions are ready, stir in turkey, Great Northern Beans, and chicken broth as well as 24 oz. of water. Reduce heat to low and simmer for 5 minutes. Add Herbes De Provence and stir. Continue to simmer at low heat, stirring occasionally, for 15 to 20 minutes.

Makes approx. 8 servings

Turkey Frame Soup
Ingredients
1 meaty turkey frame
4 cups water
4 cups turkey or chicken broth
1 large onion, quartered
1 clove garlic, crushed
1/2 tsp. salt
Chopped cooked turkey
1/4 cup sun-dried tomatoes, cut into thin strips
1-1/2 tsp. dried Italian seasoning
1/4 tsp. ground black pepper
3 cups sliced or cubed vegetables, such as carrots, parsnips, or turnips
1-1/2 cups high-fiber or whole wheat pasta, such as rotini or penne
1 15-oz. can Great Northern beans or white kidney beans, rinsed and drained
Grated Parmesan cheese (optional)

Directions
1. Break turkey frame or cut in half with kitchen shears. Place in large pot. Add water, broth, onion, garlic, and salt. Bring to boiling; reduce heat. Cover and simmer for 1-1/2 hours.

2. Remove turkey frame. Cool; cut meat off bones; coarsely chop meat. Add enough turkey to equal 2 cups. Set aside. Discard bones. Strain broth; skim off fat.

3. Return broth to pot. Stir in tomatoes, Italian seasoning, and pepper. Stir in vegetables. Return to boiling; reduce heat. Cover; simmer for 5 minutes. Add pasta. Simmer, uncovered, for 8 to 10 minutes or until pasta is tender and still firm and vegetables are tender. Stir in turkey and beans; heat through. Serve with grated Parmesan cheese. Makes 6 main-dish servings

my dad always made turkey stew after the holidays
you need
turkey of course
chopped potatos
celery
onions
garlic salt and pepper
canned or fresh tomatos
cook it all together til all is done and enjy

If the turkey is from Thanksgiving, it will go great in salmanila slime stew. Serve it over slimy stuffing and feed it at christmas dinner. Yum!?!?!
