Mexican Marinade (start about 5 days before you expect to eat)
3 or 4 garlic cloves cut in 4ths.
1 cup olive oil
a piece of orange peel about as big as your thumb with the white part cut off. ( the peel not your thumb)
a sprig of fresh rosemary or ¼ tsp. dried.
put it all in a jar. close the lid and let it sit at room temp for a couple of days..
marinate the hens with the sauce overnite in the reefer. Then BAR-B QUE

1 1/2 teaspoons dried thyme, divided

DIRECTIONS
Place the hens on a wire rack in a large roasting pan. In a bowl, combine lemon juice, butter, paprika and 1 teaspoon each of thyme, seasoned salt and garlic powder. Pour half over the hens; set the remaining mixture aside for basting. Combine salt, pepper and remaining thyme, seasoned salt and garlic powder; sprinkle over hens. Bake, uncovered, at 375 degrees F for 30 minutes. Baste with reserved lemon juice mixture. Bake 30 minutes longer, basting occasionally, or until the meat is tender and juices run clear.

INGREDIENTS
4 Cornish game hens
2 limes, halved
2 teaspoons olive oil
1/4 teaspoon chili powder
1/4 teaspoon ground cumin
kosher salt to taste
ground black pepper to taste
DIRECTIONS
Preheat oven to 425 degrees F (220 degrees C).
Rub each hen with a lime half. Drizzle the hens with olive oil, and season with chili powder, cumin, kosher salt, and pepper. Place hens on a rack in a shallow roasting pan.
Roast hens 15 minutes in the preheated oven. Reduce heat to 350 degrees F (175 degrees C), and continue roasting 30 minutes, or to an internal temperature of 180 degrees F (80 degrees C).

WILD RICE & CORNISH HENS
2 tbsp. butter
1 pkg. onion soup mix
1 pkg. long grain & wild rice mix with seasoning packet
3 Cornish split hens
1 (10 3/4 oz.) can of cream of mushroom soup
1 1/2 c. chicken broth
Melt butter in 9 x 14 inch glass casserole. Sprinkle with onion soup mix. Spread uncooked rice over the soup mix. Spread seasoning package over rice. Place Cornish hen halves on top. Dilute mushroom soup with chicken broth and pour over Cornish hen halves. Cover with foil. Bake in preheated oven at 350 degrees for 1 1/2 hours. Remove foil for last 15 minutes.

"Glazed Cornish Hens" - 4 servings
4 (1 lb.) Cornish game hens
4 small white onions; quartered
4 sprigs parsley
1/4 cup butter or margarine; melted
1 tsp. salt
1/4 tsp. paprika
1/8 tsp. pepper
1/3 cup honey
1/3 cup orange marmalade
1/3 cup orange juice
2 large oranges; peeled and sliced
1) Remove giblets and neck from inside hens (use giblets and neck for broth, if desired). Rinse hens with running cold water; drain well. With hens breast-side up, lift wings up toward neck, then fold under back of birds to balance them.
2) Place onions and parsley into cavities; tie legs. On rack in roasting pan, place hens breast-side up; brush with melted butter. Sprinkle with salt, paprika and pepper.
3) Roast uncovered at 350* - 45 minutes. Baste occasionally with pan drippings.
4) Meanwhile, in small bowl, combine honey, marmalade and orange juice. Brush over hens; roast 10 minutes more. Add oranges to roasting pan. Baste hens and oranges with honey mixture. Roast 10-15 minutes more or until hens are fork-tender; baste occasionally with honey mixture.
5) To serve: Arrange hens on platter with orange slices.

Rosemary-Lemon Cornish Hens w Roasted Potatoes & Maple Squash
Serving Size : 2
You can easily vary this recipe by using thyme in place of rosemary or sprinkling ground red pepper and garlic powder over the potatoes.
2 teaspoons crushed dried rosemary
1/2 teaspoon salt, divided
1/4 teaspoon black pepper, divided
2 (1 1/4-pound) Cornish hens
1/2 lemon, halved and divided
2 cups cubed Yukon gold or red potato
2 teaspoons olive oil
Preheat oven to 375°. Combine crushed dried rosemary, 1/4 teaspoon salt, and 1/8 teaspoon pepper. Remove and discard giblets from hens. Rinse hens with cold water; pat dry. Remove skin; trim excess fat.
Working with 1 hen at a time, place 1 lemon piece in the cavity of hen; tie ends of legs together with twine. Lift wing tips up and over back; tuck under hen. Repeat procedure with remaining hen and lemon piece. Rub hens with rosemary mixture. Place hens, breast sides up, on a broiler pan coated with cooking spray.
Toss potato with oil; sprinkle with 1/4 teaspoon salt and 1/8 teaspoon pepper. Arrange the potato around hens. Insert a meat thermometer into meaty part of a thigh, making sure not to touch bone. Bake at 375° for 1 hour or until thermometer registers 180°. Remove twine. Yield: 2 servings (serving size: 1 hen and about 3/4 cup potatoes)
Maple-Glazed Winter Squash
If you are serving the squash with the Rosemary-Lemon Cornish Hens with Roasted Potatoes, you can cook the squash in the same roasting pan. Make sure to arrange the squash on the front of the pan so you can easily brush it with the syrup mixture when you open the oven door.
1 (1 3/4-pound) butternut squash
Cooking spray
4 teaspoons maple syrup, divided
1 teaspoon butter, divided
Preheat oven to 375°. Cut squash 1 inch above bulb; save stem section for another use. Cut bulb in half lengthwise. Remove and discard seeds and membranes. Place squash halves, cut sides up, on a broiler pan; place 2 teaspoons maple syrup and 1/2 teaspoon butter in each squash half. Bake at 375° for 1 hour or until the squash is tender, brushing cut sides with syrup mixture every 20 minutes. Yield: 2 servings (serving size: 1 squash half)

just bake them in the oven just like you would bake a chicken
they are good wth stuffing and mashed ptatoes too
salt and pepper and butter to baste
bake at 350 for 45 mins or so
tou can cover or not
sepends on your preference
covered will be more tender
uncovered the skin will be crunchy

I take salt, pepper, and garlic salt and rub under the skin. Then bake, grill, or deep fry. If you're going to grill them split them down the spine so they are flat or stick them on top of a can of beer.
