JAMAICAN SPICY APPETIZERS
1/3 c. minced onion
2 tbsp. oil
1/2 lb. ground beef
1/2 c. chopped tomatoes
1 tsp. salt
1/2 tsp. garlic powder
1/2 tsp. dry mustard
1/4 tsp. hot pepper sauce
2 eggs
2 1/2 c. flour
1/2 c. butter
1/4 c. cold water
Cook onion in oil until clear. Add beef and cook until brown, breaking apart with a fork. Add tomato and remaining seasonings. Cook for 5 minutes. Add 1 beaten egg, stir and cook for 2 minutes longer. Put mixture aside to cool.
Meanwhile, cut butter into the flour. Add remaining egg. Mix and form into ball. Roll to 1/16 inch thickness. Cut in 2 1/2 inch rounds. Place 1 teaspoon filling on each pastry round. Fold in half. Seal and crimp edges. Prick tops. Place on greased baking sheets. Bake at 450 degrees for 12 minutes. Yield: 30.

Anything can be made spicy by adding diced jalepinos. My spicy "Rotel from Hell" is always a hit at parties...Take 1 roll spicy sausage ( don't use the kind with sage ) & brown in skillet. In crockpot, add cooked sausage, 1 block Velveta spicy mexican, 1 can rotel chilis & tomatos, 1 clove garlic minced & salt and pepper. Cook on low til melted, then serve with chips, japalenos, sour cream or other favorite sides....The best part is it can be transported in the crockpot & kept heated during serving....

Buffalo Chicken Tenders
1/2 c all purpose flour
1/2 c hot cayenne pepper sauce
1 c dry bread crumbs
4 boneless; skinless chicken breast, cut into strips
1 nonstick cooking spray
Preheat oven to 425. Place flour, hot sauce and bread crumbs each in its own shallow dish. Dip chicken strips into flour, then hot sauce, then crumbs-coat evenly with each. Place coated strips about 1 inch apart on lightly sprayed cooking sheet and bake for about 8 min. Turn chicken over and spray with cooking spray; cook for 2-3 more minutes, or until chicken is cooked through and breading is golden brown.
Layered Pesto and Red Pepper Dip
1 tub (8 oz.) PHILADELPHIA Light Cream Cheese Spread, divided
1/4 cup chopped drained roasted red peppers
1 Tbsp. pesto
1 Tbsp. milk
WHEAT THINS Snack Crackers
PLACE half of the cream cheese spread and the peppers in blender; cover. Blend 30 to 40 sec. or until well blended, stopping and scraping down side of blender as needed. MIX remaining cream cheese spread, the pesto and milk until well blended. Spread onto small serving plate; top with the red pepper mixture. Cover. REFRIGERATE at least 1 hour before serving.
Pepper Jelly Appetizer
1 brick (8oz.) cream cheese
1 small jar pepper jelly
Ritz crackers
Place brick of cream cheese on a platter, pour pepper jelly overtop. Serve with crackers.

"Apricot Kielbasa Slices" - 4 dozen
1 lb. fully cooked kielbasa or Polish sausage; cut into 1/4" slices
1 (12 oz.) apricot preserves
2 tbsp. lemon juice
2 tsp. Dijon mustard
1/4 tsp. ground ginger
In large skillet, brown sausage; drain and set aside. Add remaining ingredients to skillet; cook over low heat 2 to 3 minutes or until heated through, stirring occasionally. Return sausage to skillet; cook 5 to 6 minutes or until heated through.
"Enchilada Meatballs" - 4 1/2 dozen
2 cups crumbled corn bread
1 (10 oz.) can enchilada sauce; divided
1/2 tsp. salt
1 1/2 lbs. ground beef
1 (8 oz.) can tomato sauce
1/2 cup shredded Mexican cheese blend
In large bowl, combine corn bread, 1/2 cup of the enchilada sauce and salt. Crumble beef over mixture; mix well and shape into 1" balls. Place in a greased 15x10" baking pan. Bake, uncovered, at 350* for 18-22 minutes or until meat is no longer pink.
Meanwhile, in small saucepan, heat tomato sauce and remaining enchilada sauce. Drain meatballs; place in serving dish. Top with sauce and sprinkle with cheese. Serve with toothpicks.

Instead of Buaflo wings, try deep fried chicken wings with hot oil, like they serve in Chinese restaurants. You can but hot oil or easily make it yourself. Just buy a bag of dried chile peppers, remove the stems, crush in a food processor, add a little more vegetable oil than it takes to cover them and then bring to a gentle immer for just a minute or two. Spread this on the chicken wings.

Sausage Cheese Dip:
-Velveeta pepper jack cheese
-Salsa....pick how spicy you like it
-Hot pork sausage...(soy sausage in my case)
-Chips
Melt the cheese in a crock pot. Cook the sausage and add it and the amount of salsa you like. You can even put refried beans in it if you like. Serve with CHIPS....Spicy & YUMMO!!! You can also make a lot for cheap.

all you need are the tostada dipping chips
velveeta cheese melted and rotel tomatoes to make it hot and spicy
just put the cheese and tomatoes in the micro wave
heat til melted
stir
take the chips and enjoy
very easy and tasty
