.I'm making chicken salad tonight. I'm cutting up celery & onions, using mayo, dash of lemon juice, s&p to taste. I'm also serving it with cole slaw and asparagus

Chicken Pot Pie leftover roasted or boiled chicken 2 tablespoons vegetable oil 1 onion, peeled and diced 2 tablespoons flour 1 can chicken stock or 2 cups fresh chicken stock 1 cup frozen peas 2 large carrots, peeled and chopped 3 sprigs of parsley, chopped 2 tablespoons plain yogurt salt and pepper to taste 2 sheets ready roll pastry Mix 1 egg yolk mixed with 2 tablespoons milk for glazing Remove the chicken from the bone and chop it up. Add vegetable oil to a saucepan and saute onions until they are soft. Add the flour and stir. Then add the chicken stock. Add the chopped chicken, celery, and carrots and stir some more. Take away from the heat and add the yogurt and the chopped parsley. Stir and add salt and pepper. Grease a deep 9 inch pie plate and line the bottom with one ready rolled pastry. Make sure there's a little bit of pastry overlapping. Pour the filling into the pie plate. Brush the edges of the pastry with the milk and egg yolk glaze. Gently place the other ready rolled pastry on top. Press the edges of the pastries together to seal. Trim off any extra pastry and press around the pie with a fork. Cut 4 steam holes on the top and brush the top of the pastry with the rest of the glaze. Bake in a 425F degree (220C degree) oven for 30 to 35 minutes.

You could make an easy chicken Curry. Cut an onion or two into rings, mince a clove of garlic, sauté in oil or butter. When the onions become transparent add quite a bit of curry powder (and some cayenne pepper, if you like it hot), stirring. Slowly add chicken stock. Let it simmer for a few minutes. Cut the chicken into bite-sized pieces and add them to the pot. When the chicken is heated through add some heavy cream. When it comes back to a simmer thicken the mixture with corn starch dissolved in cold water, or a roux, if you prefer, and let it simmer a bit, just long enough to cook the thickening agent. That's it. Serve over rice. I like to serve sliced bananas with it, and chopped cucumber, maybe some nuts, diced apple, whatever I have around.

roast chicken salad. this is what i do.
either shred or slice the chicken then add to coral or cos lettuce. add tomato cut into eights and cubed fetta. a sprinkle of oregano. a few black spanish olives. even some sundried tomatoes if you wish.
or make a chicken roll with mayo or packet gravy thats good too!

You could make a pasta salad with shredded or cut up chicken. How about chicken noodle soup, its good on these cold days.

If you have a crockpot throw in some diced onions, celery and carrots, chicken broth (I like to add a couple of packets of chicken gravy mix too), fresh garlic, and salt & pepper and make a nice homemade soup.

You could make chicken salad, add mayo and some herbs. Or shred the meat and add some bbq sauce, heat it up and make a sandwich.
