CHILI SHRIMP QUICHE
1 pie crust
Pie crust to fit a 10 inch flan pan or round casserole with straight sides.
FILLING:
4 eggs
1/2 c. milk
1/2 c. light cream
1/2 clove garlic, crushed
1 c. Cheddar cheese, grated
3 green onions, chopped
2 green chilies, seeded and chopped
8 oz. cooked and peeled shrimp
Salt to taste
Cooked shrimp and parsley sprigs for garnish
Carefully press the pastry onto the bottom and up the sides of the dish, taking care not to stretch it. Trim the top edge with a sharp knife to give an even finish.
Mix the eggs, milk, cream and garlic together. Sprinkle cheese, onion, chilies and shrimp onto the base of the pastry and pour the egg mixture over that. Bake in a preheated 400 degree oven for 30-40 minutes until firm and golden brown. Garnish with additional shrimp and parsley.
For variation you may add red and green peppers and coriander leaves (cilantro) to the filling before baking.
Serving ideas: Serve as a started, cut in thin wedges or baked in individual dishes. Serve hot or cold with a salad for a light meal.

Shrimp Scampi
Butter
Shrimp, shelled and deveined
1 green onion
1 clove garlic
White cooking wine
parsley
Angel hair pasta
Parmesan
Saute shrimp in butter, garlic, onion, and parsley until thoroughly cooked. Add about 3-4 tablespoons of white wine. Let it simmer until it no longer tastes like wine. Cook angel hair according to directions. Add shrimp and sauce to pasta, toss, top with Parmesan if desired, and garnish with French bread.
This recipe is great for a fast, easy, and delicious meal.

I don't know the exact name for it, but I used to make this really simple shrimp pasta dish. You boil fettucine noodles while you're pan-frying peeled, deveined, clean shrimp and broccoli florets. I used regular olive oil and butter for flavor. A dash of red pepper flakes, garlic, and salt. Once the shrimp and broccoli is finished, you put it over the drained pasta. Delish!

"Thai Shrimp and Cabbage" - 1 serving
1 cup shredded cabbage
3 tsp. vegetable oil; divided
1 slice onion; halved
1 garlic clove; minced
8 uncooked large shrimp; peeled and deveined
2 tbsp. water
1 tbsp. soy sauce
1 tbsp. minced fresh cilantro (parsley)
1/8 tsp. crushed red pepper flakes
In small skillet, stir-fry cabbage in 1 tsp. oil for 2 minutes or until tender; remove and keep warm. In same skillet, stir-fry onion and garlic in remaining oil until tender. Add shrimp, water and soy sauce; stir-fry 2 to 3 minutes or until shrimp turn pink. Stir in cilantro and pepper flakes. Serve over cabbage.
"Shrimp Jalapeno Boats" - 3 dozen
18 medium jalapeno peppers
2 (8 oz.) cartons spreadable chive and onion cream cheese
1/2 cup shredded sharp Cheddar cheese
1/2 cup sliced green onions
1/2 lb. frozen small cooked shrimp; thawed
Cut jalapenos in half; remove seeds. Place in two ungreased 15x10x1" baking pans. In small mixing bowl, combine cream cheese, Cheddar and onions; spoon into jalapeno halves and top with shrimp. Bake at 400* for 18-22 minutes or until jalapenos are tender.
"Louisiana Shrimp" - 10 servings
1 lb. butter; cubed
3 medium lemons; sliced
2 tbsp. plus 1 1/2 tsp. coarsely ground pepper
2 tbsp. Worcestershire sauce
2 garlic cloves; minced
1/2 tsp. salt
1/2 tsp. hot pepper sauce
2 1/2 lbs. uncooked shell-on medium shrimp
In large saucepan, combine first 7 ingredients; bring to boil. Reduce heat; cover and simmer 30 minutes, stirring occasionally.
Place shrimp in large roasting pan; pour butter mixture over top. Bake, uncovered, at 375* for 20-25 minutes or until shrimp turn pink. Serve warm with a slotted spoon.
