I made some pasta today, with sauteed shrimp. I combined olive oil, lemon juice, garlic, margarine, parmesan cheese, and spices, then added shrimp, and tossed with pasta.
I noticed some blue bits. I'm guessing it was some sort of chemical reaction with the lemon juice - any ideas? It tasted just fine but it looked rather odd and I'd like to avoid it if I'm making it for company!

I'm not too worried about it :) As I say, it tasted great! But it looks weird and I am planning on making it for company next week.

Okay, I figured it might lemon + garlic. Is there any way around that? Surely many recipes call for garlic and lemon and they can't all be blue!

I used basil and a mix called "Italian Spices." Whatever that means :P

I really don't think it was the lemon and garlic.I would tend to think it was one of the spices that you used! Did any of the spices have celery leaves or maybe oregano? If so, I'd say that they could have had a chemical reaction to the lemon, because of the acidity levels in the lemon! It could have caused the leaves to fade from a greenish to a bluish color. Hey.......if it still tasted good, why not make it for company? Tell them it's a new dish, and get creative with it!

Garlic turns blue because of a reaction to the lemon juice.

I bet it's a spice. As long as it tastes fine, it should be great!! It also couldve been a chemical reeaction also. Or maybe something is Expired! Just check the label! I've seen blue bitz in my pasta b4 also and it was a type of spice that i had put in it. Good luck :-D

That could've been the spices. They may have looked blue but were most likely just looking the way they did due to the different ingredients. As long as all of the items you put into make the pasta were fresh and not past expiration date then there's nothing to worry about.

I think it's the garlic and the lemon juice!
Garlic turned bluish on me too but I cooked it with mushrooms.
