The eyes of the potato are the parts that are planted to make new potatoes. The potato is the storage root of food for the new plant. There is chlorophyll in the plant and when the potatoes are stored in the light the potato starts turning green to make new food.

I heard that a potato that has green on it is because at one point it was exposed to the sun and it got "sunburned"

i think that means the potatoes wasnt through growing yet

but, add that the green part is poisonous and will make you sick if eaten cooked or raw.
