Absolutely, if you can though add a bit more than you would of vanilla.

Amaretto will give whatever you are making a slightly bitter almond flavour, if that is ok, then go ahead.

Otherwise just suppress the vanilla (do without).

If it's a cake you could use a vanilla yogurt (reduce other liquids one third).

Maple syrup will also give you a flavour similar to vanilla, use a tablespoon or two instead of the vanilla extract and reduce your sugar in that same amount.

amaretto has a sweet almond flavor although its actually made from peach pits it will change the flavor some but wont be bad. vanilla extract at any grocery store
