Boil the potatoes in the jackets, whole until fork pierces the meat of the potato but still resists somewhat. ( 5 med potatoes about 12-15 minutes)
Slice the potatoes to desired thickness. Heat 2T oil in a skillet over med-high heat add potatoes. Turn often until browned.
I like to add sliced onions.

Hash Browns?

Homemade Hash Browns
6 pounds medium potatoes
1 large onion, chopped
1/2 cup butter or margarine
1 teaspoon salt
1 teaspoon pepper
Place potatoes in a Dutch oven and cover with water. Bring to a boil; cover and simmer for 15-20 minutes or until potatoes are tender but still firm. Cool slightly; chop into bite size pieces. In a Dutch oven, saute onion in butter. Add the potatoes; sprinkle with salt and pepper. Cook until golden brown.

Yes, you can boil potatoes first, and then when they're done, cut them up into little chunks and fry them in butter or oil. You can leave the skin on if you want, but I usually peel them first.

JUST PUT THEM IN A PAN OF WATER AND BOIL UNTIL THEY'RE NOT HARD, THEN SLICE AND FRY. GOOD. THIS WAY THEY DON'T TAKE NEAR AS LONG TO FRY. YOU CAN ALSO GET THE SAME EFFECT IF YOU COOK THE POTATOES IN THE MICROWAVE, ENJOY.
