Candy to MAKE??
CARAMEL CORN
9 cps. popcorn
2/3 cps. packed brown sugar
1/3 cp. light corn syrup
3 Tbs. butter
1/2 tsp. vanilla
1/4 tsp. baking soda
*Remove all unpopped kernels & put popcorn in 17 x 12 x 2 pan
*! 1/2 qt. pan - combine brown sugar, corn syrup & butter. Cook & stir over medium heat til butter melts & mixture boils.
*Reduce heat to medium low & cook without stirring for 5 minutes more. Remove from heat. Stir in vanilla & baking soda. Pour syrup mixture over popcorn in baking pan & gently stir to coat.
*Bake in a 300 oven for 15 minutes, Stir & bake 5 more minutes
*Transfer mixture to large foil sheet foil & cool completely. Break into clusters. Store tightly covered.
I have also stirred in almonds, peanuts & cashews before baking....
PEANUT BRITTLE
1 cp. unsalted roasted peanuts
1/2 cp. sugar
1/3 cp. white Karo syrup
pinch of salt
1 tsp. baking soda
1 Tbs. unsalted butter
Melt 1 Tbs. butter in skillet, add peanuts, syrup & sugar; mix well.
Cook over medium heat for about 7 minutes, stirring occasionaly.
Remove from heat, add soda & stir FAST. Quickly pour onto foil & let cool.
Once cool, break into pieces & store in tight containers....
FUDGE
(3) 6 oz. bags chocolate chips
8 oz. pkg. mini marshmellows (4 cps.)
2 cps. unsalted butter
1 tsp. vanilla
2 cps. chopped nuts
Place above ingredients in a large pan
In medium pan:
4 1/2 cps. sugar
13 oz. can Eagle Brand Evaporated Milk
put in pan & boil EXACTLY 6 minutes from the time it comes to a full boil.
Remove from stove & pour over first ingredients.
STIR UNTIL ALL IS DISOLVED
Spread into 9 x 13 x 2 pans.
Cool & store covered in the refrigerator
Makes 5 lbs.
