I am looking for a chicken and rice recipe that includes some of the following ingredinents: chicken, chicken broth, rice, cream of mushroom soup, butter, chopped onions and possibly milk or evaporated milk. I am not sure that I have all ingredients listed. Please post what you can come up and thanks.

I don't have an exact recipe, but it sounds like something that I make. Here's how I do it:

Boil two boneless chicken breasts until done, let cool, and dice. Cook a cup of rice, substituting the chicken broth (canned or the broth from the chicken) in place of the water for extra flavor.

Saute the onions in butter until transparent, and drain. (A few sauteed mushrooms and/or some diced red and green peppers perk up this dish considerably.)

Mix a can of mushroom soup and half a can of milk. Season with salt, pepper, and some onion and garlic salt to taste. Combine all ingredients in a large casserole dish, and bake at 350 degrees for 25 to 30 minutes.

During the last five minutes of cooking, you could top with one of the following: canned french fried onions, buttered bread or cracker crumbs, or crumbled potato chips. Hope this is close to what you're wanting!

Here's our family's favorite:
CHICKEN AND RICE

1 can cream of mushroom soup
1 can cream of chicken soup
1 can cream of celery soup
2 soup cans milk
2 1/4 cups uncooked rice ("real" or minute)
1 (4 ounce) can mushrooms with juice
1 1/2 envelopes Lipton's onion soup mix
Family pack of chicken (or 6 chicken breasts)

Combine canned soups and milk. Set aside 1 cup of this mixture. Add rice, mushrooms and 1 package onion soup mix to soup-milk mixture. Line 9x13" pan with foil or grease well. Pour soup/rice mixture into pan. Layer chicken. Pour reserved 1 cup cream soup/milk mixture over chicken. Sprinkle with 1/2 package onion soup mix. Bake until chicken almost done covered with foil, approximately 1 hour. Remove foil and bake 15 minutes until top browned.

"Campbell's One-Dish Chicken & Rice Bake" - Serves 4

1 (10 3/4 oz.) can Campbell's Cream of Mushroom Soup
1 cup water
3/4 cup uncooked regular white rice
1/4 tsp. paprika
1/4 tsp. pepper
4 boneless, skinless chicken breast halves

In 2-quart shallow baking dish mix soup, rice, paprika and pepper; place chicken on rice mixture. Sprinkle with additional paprika and pepper; cover and bake at 375* - 45 minutes or until chicken and rice are done.


"Creamy Chicken Casserole" - 8 servings

2 tbsp. butter or margarine
1/2 cup chopped onion
1 (10 3/4 oz.) can condensed cream of chicken soup
1 (10 3/4 oz.) can condensed cream of mushroom soup
1 cup milk
1/8 tsp. pepper
3 cups cubed cooked chicken or ham
4 cups cooked noodles
1/2 cup shredded Cheddar cheese

1) In 4-quart saucepan over medium-high heat, in hot butter, cook onion until tender; stir in soups, milk and pepper. Stir in chicken and noodles; pour into 3-quart casserole.
2) Bake at 400* - 25 minutes or until hot; stir. Sprinkle with cheese. Bake 5 minutes more or until cheese melts. Yields 8 cups.

one cup cooked chicken in chopped up pieces
I 1/2 cup cooked rice
Cream of mushroom soup
1/4 cup of chopped scalions or onions
1 cup chopped celery
1 small can of water chestnuts or slivered almonds
1/4 cup of mayo
1 teaspoon lemon

Combine and bake for 30 minutes at 350 degrees.
5 minutes before you take it out add a personal size bag of crushed potato chips. (crush them in the bag) Top the casserole with the potato chips. If you want you can first top with some gratted sharp cheddar cheese. Use broiler for a couple of moments to brown the cheese and or chips.

Let sit for 10 minutes after removing from oven and serve.

That sounds like a big messy recipe. Try egg noodles, with chicken breast. Just add 3 table spoons of mayonnaise and a fresh squeezed lemon.
