Hamburger is always beef.
Fast food chains like Jack in the Box use ground beef and soy with other things.
If you have a beef allergy, do not eat hamburgers.
The cheese is put on top.

Officially it should contain ground beef, some fat, onions, salt and pepper.
But who know what meat they put into it: horse? buffalo? mad cow? Your guess is as good as mine.
BTW Wikipedia describes hamburger ingredients as:
In most countries, a commercial hamburger usually contains no ham or other pork product. It is made primarily of ground beef, although it may also contain spices and other ingredients. (In the 1930's ground liver was sometimes added to the mixture). This is also known as a beef hamburger or a "beefburger." A beef hamburger that contains no other ingredients besides the beef itself is often referred to as an "all beef hamburger" or "all beef patties." Some prepare their patties with egg, bread crumbs, onions or onion soup mix, Worcestershire sauce, parsley or other ingredients.
Recent years have seen the increasing popularity of new types of "burgers" in which alternatives to ground beef are used as the primary ingredient. For example, a turkey burger uses ground turkey meat, a chicken burger uses either ground chicken meat or chicken filets. A buffalo burger uses ground meat from a bison and some mix Cow and buffalo, thus creating a "Beefalo burger" and an ostrich burger is made from ground seasoned ostrich meat. A bambi burger uses ground venison from deer.

You HAD to ask that question didn't you? I would tell you but
you would never eat it again. Pick out a choice piece of
beef and have the butcher grind it in front of you. This is the
only way you are assured of what's in it.
Thankfully, you are allergic to beef. I would guess tho that
your allergy is more from the other ingredients in the "so-called" JITB hamburger, than the beef (if it in fact-beef.)

Anything that states 100% ground beef, can be made from anything beef. Tongue, brain, leg, or anything. You have to make sure that the ground beef you buy says 100% ground round, ground chuck or something like that.

Hamburger is made of beef. I don't eat beef. I like turkey burgers and I make them taste like beef by using a little liquid smoke and kitchen bouquet. Just pour a little on each side as you saute and you will love the result.
