PICKLED EGGS:
1 Tablespoon salt
1 1/2 teaspoon sugar
1 teaspoon peppercorns, crushed
1 bay leaf
1/2 cup water
1 1/2 cup cider vinegar
12 hard boiled eggs, peeled
Combine seasonings with water and vinegar in a non-reactive saucepan and bring to a boil. Reduce heat, cover and simmer for about 15 minutes. Let liquid cool for about 10-15 minutes.
Pour liquid over eggs in jar, and refrigerate. It will take about a week for the eggs to absorb the flavorings.

Most people just put them in a jar of vinegar till they are covered and you can leave them out and eat them when you want one.

But here's another way and judge ingredients by the number of eggs you are using.

3 c. white vinegar
1/4 c. sugar
2 tbsp. pickling spice
3 tsp. salt
1 bay leaf
18 shelled hard boiled eggs or peel.

Cook first 4 ingredients in medium saucepan over high heat until sugar completely dissolves. Put eggs in a 2 quart jar and cover with pickling mixture and store 1 to 2 days in refrigerator before serving. Let warm to room temperature and serve.

just put the eggs in a jar of vinegar, thats all, let them sit for a while in there in the refrigerator, the longer they sit the more pickled they become. I do suggest you hard boil them first, it makes it easier to eat,
