There is a particular bacteria that abides in Chicken and Pork products that can only be killed through heating. This bacteria does not occur in red meat. White meat usually is host to more human parasites, too.

Because white meat comes from birds and birds can carry diseases such as salmonella.

Red meat (such as beef / lamb / pork) can be pink in the middle, however if it has been minced and re-formed (as in a hamburger) then it should be cooked all the way through as diseases can attach themselves to the outside of a piece of red meat but not penetrate through it.

Even Red meat should be cooked thoroughly unless you are very sure that it is definitely tape worm free.

This is to make sure and kill any micro organisms and bacteria that may be in the raw meat naturally. Like Salmonella.

There is a dange with some meats that they may carry a worm parasite, if this enters your body it could find it's way to your brain and cause neuro cysticerchosis, eventual death may occur.
