In essence, being created "in the image of God" refers to the characteristics of the human spirit and the ability to make moral judgments - things that are not found in any animal species, even those to whom we are said to be closely related. In answer to why so many ethnic types, if all the people on earth were to intermarry freely, and then break into random groups that kept to themselves, a whole new set of gene combinations would emerge. Even today, within a particular people group you will often see a feature normally associated with another people group. For instance, you will occasionally see a European with a broad flat nose, or a Chinese person with very pale skin or Caucasian eyes. Most scientists now agree that, for modern humans, "race" has little or no biological meaning. This also argues strongly against the idea that the people groups have been evolving separately for long periods.

What hes talking about is that he put apart of him inside of us. That way when he looks at us we can make him happy ( in order for a perfect being to be happy is to see himself because no one else can make him happy ) We are cloaked in flesh and have temptations and desires because of it but if we try we can be made pure (aka saint) and be like a mirror image of god in mans flesh.
Even Jesus was tempted not to "take up the cross" but that doesent meen that he bottomed out.

Understand the concept of god... his image and all would become clear-
God Almighty did not make us in his image but he made the true inner self of us in his image. And our true inner self is our soul (atman in Hinduism) residing within our heart.
No human body is ever created by God. As we sow so shall be reap... nothing more or less! As we perform our karma... so shall be our future. God Almighty has got nothing to do with it. God Almighty never interferes with the creation of his.
On the contrary every soul (atman) existing in the whole of Cosmos was made by God Almighty in his image. The essence of all souls (atmans) is the same.
Now depending upon the residual balance of karma of a human being in a particular life... we get our next birth. And the body manifested by our soul (atman) varies from other bodies depending on the balance of karma of each and every individual.
It is only after gaining enlightenment that every enlightened soul draws upon itself the true image of God... all dross within having been removed forever... the soul comes back to its original pristine form... the image of God Almighty in its totality! God is a Thinking, reasoning , decision making, creative being. In that, we are like Him.
Also, the word translated image, also means reflection. Just like our reflection in a mirror resembles us, it's not really like us. It can't do the things we do.
In the same way, we are a reflection of God. Like Him in some ways, but limited like an image in a mirror.

Since everyone looks different, "image" cannot mean like a carbon copy. However we are all body mind and spirit, and God has definitely shown us in scripture that He is as well.

It was an expression. When we were made in God's image we were made as he was. He is holy, and pure. He didn't actually mean we were made to look like him. We are meant to adopt his personal qualities.
