An English Staffordshire Bull? Are they shorter and really muscular like the taller American Staffordhire Bull Terrier? I have a Pit Bull. She's a big chicken, and completely harmless. Has been for 9 years; we don't expect a change now. The experts I've read say that training, a lot of exercise, and consistency increases a dog's confidence.
To desensitize her from noise, see if you could get a tape of fireworks sounds. If not, then use anything that can become loud. Introduce her to the sound a little at a time, louder and louder every few days. It may take a while, but it's what you might have to do.
Same thing with darkness. Go outside with her for a few minutes and don't console her. She's not human; she's a dog. Dogs need a strong leader. So go outside like it's business as usual, a confident and positive "That's life" attitude. You don't even have to look at her. Just enjoy the night. Then go back inside without saying a thing. Keep doing that for longer periods of time, extending each period after she seems comfortable, maybe beginning to play with her after 20 to 30 minutes. Best of luck!

Your staffie probably has some inate fears. I would suggest hiring a professional dog behavioralist, someone licensed and certified by the ACABC. They can do an evaluation and some target training for your dog. These fears can torment a dog, but can also lead to some serious behavioral issues later on.
Do not just hire a dog trainer. Anyone can call themselves a dog trainer, but you need a professional dog behavioralist.

3 times a day is OK for now; I normally drop to twice a day at 9 months old. Obviously there are no exact guidelines so I would just reduce it to twice a day some time over the next few months

Well then dont walk her at night. My dog hates the rain and wont go out at all in the rain so I dont make her
