Vanilla Sugar Cookies
Ingredients:
4 cups sifted unbleached flour
1 teaspoon baking soda
1 teaspoon salt (optional)
1 cup unsalted butter
2 cups sugar
2 eggs, separated
1 tablespoon pure vanilla extract
1 cup buttermilk or sour cream
Vanilla sugar
Instructions:
Preheat oven to 350 degrees
Sift flour with baking soda and salt; set aside. In a large mixing bowl cream butter with sugar, egg yolks and vanilla extract until light and fluffy. Stir in flour mixture alternately with buttermilk, beginning and ending with flour. Blend well. In another bowl beat egg whites until stiff but not dry. Fold into cookie batter.
Drop by tablespoonfuls onto greased cookie sheets. Spread and shape cookie on back of spoon into a 2-inch circle, 1/2 inch high. Sprinkle generously with vanilla sugar.
Bake 12 to 15 minutes, or until golden around the edges. Immediately remove to rack; sprinkle again with vanilla sugar and cool completely.
Makes 3 to 4 dozen cookies.

Hi there try this recipe>>PEANUT BUTTER COOKIES>>>1 cup peanut butter>>1 cup sugar>>1 egg>> 1 teaspoon vanilla>>Mix this altogether real well and scoop out the dough with a teaspoon and roll into round balls; place onto an unbaked cookie sheet; make a Cris cross mark on top of each ball of dough; bake in a 350* for 8-10 minutes (you should get 12 cookies)>>>I know it doesn't seem that this would make a batch of cookies BUT believe me I had my doubts too until I try the recipe and boy are they the best and cheapest cookies I ever made>>Besides most people have these ingredients on hand so you don't have to get anything special to make them...Paula Dean has made the same cookie but used Splenda instead of the regular sugar..Good Luck and I hope you do try these cookies........=)

Chocolate Chip Heart Cookies (Cookie Mix)
No rolling pin is needed! A cookie cutter and balls of cookie dough are the secret to lovely cookies.
Prep Time:1 hr
Start to Finish:1 hr
Makes:22 cookies
1 pouch Betty Crocker® chocolate chip cookie mix
1/4 cup Gold Medal® all-purpose flour
1/2 cup butter or margarine, softened
1 egg
3-inch open heart-shaped cookie cutter
1. Heat oven to 375°F. In medium bowl, stir cookie mix, flour, butter and egg until well blended. Roll into 1 1/4-inch balls.
2. Spray cookie cutter with cooking spray; place on ungreased cookie sheet. Press dough ball evenly into cutter. Remove cutter; reshape dough if necessary. Continue making heart-shaped cookies, placing 2 inches apart on cookie sheet. Spray cookie cutter as needed with cooking spray.
3. Bake 6 to 8 minutes or until light golden brown. Cool 2 minutes; remove from cookie sheet.
High Altitude (3500-6500 ft): Increase flour to 1/3 cup.

Margarine2 tablespoons

Canned applesauce1/4 cup
1% lowfat milk2 tablespoons
Flour1 cup
Baking soda1/4 teaspoon
Ground cinnamon1/2 teaspoon
Quick rolled oats1 cup + 2 tablespoons
PREPARATION TIME: 20 MINUTES
COOKING TIME: 13 TO 15 MINUTES EACH BATCH
1. Preheat oven to 350° F and lightly grease cookie sheets.
2. In a large bowl, use an electric mixer on medium speed to mix sugar and margarine. Mix until well blended, about 3 minutes.
3. Slowly add egg; mix on medium speed 1 minute. gradually add applesauce and milk; mix on medium speed, 1 minute. Scrape sides of bowl.
4. In another bowl, combine flour, baking soda, and cinnamon. Slowly add to applesauce mixture; mix on low speed until blended, about 2 minutes. Add oats and blend 30 seconds on low speed. Scrape sides of bowl.
5. Drop by teaspoonfuls onto cookie sheet, about 2 inches apart.
6. Bake until lightly browned, about 13 to 15 minutes. Remove from baking sheet while still warm. Cool on wire rack.

Almond Biscuits
Ingredients
50g (2 oz) soft vegetable margarine
25g (1 oz) caster sugar
75g (3 oz) plain flour
25g (1 oz) ground almonds
Blend margarine with sugar.
Stir in the flour and almonds to form a dough.
Roll out the dough and cut out shapes with a cutter.
B ake for about 8 minutes at 200ºC/400ºF until pale brown.
Cool on a cooling rack

this cookie is great.. and easy too!!
1. Peanutbutter cookie dough (make it yourself / or the refrigerator section of your grocery store / or 1 roll of refr. sugar cookie dough mixed with 1/2 cup peanut butter)
2. place balls of dough in mini muffin tins
3. bake at 375 degrees (F) for 10-12 mins
4. remove from oven and place unwrapped mini Peanut butter cup in the center of each cookie (pressing down but not to the bottom)
5. remove from pan, cool... and enjoy!

Here's one for shortbread.
1 lb butter or marg.(500gr)
1 cup icing sugar (250ml)
1/2 cup cornstartch (125ml)
3 cups flour (750ml)
1/4 tsp. almond extract or other flavoring. (1ml)
Have butter at room temperature, beat until fluffy. Gradually add icing sugar, cornstarch, and flour. beating constantly on high speed for 10-12 min.untill mixture resembles whipped cream. Spoon onto baking sheet, bake for 20 to 25 min at 325 (160C)
If desired decorate with cherry on top.
Enjoy.
