For high-end kitchens, the most popular wood is cherry. Oak, pine, and birch are not as desirable as cherry. If the kitchen cabinets are painted, then poplar is the most popular choice, because it is cheap, and holds the paint really well, and won't dent as easily as pine. Why are you asking? Oak seems to be the most common, but the most common does not mean the most POPULAR.
AND - Popularity depends upon the location!
I prefer natural maple cabinets... and I think that is popular....But I see in many house flips, cherry being used to make the kitchen 'richer'. Popularity will depend upon the house style, location and cost. Upgraded homes are going to be using maple and cherry, where a tract home may be using Oak or even laminate.
So if you are redoing a kitchen for yourself, choose what YOU like.. Since you are the one seeing it. If you are redoing a kitchen to sell, ask a local Realtor what is the most 'popular' in your area.

If you are referring to natural woods then Oak leads the pack followed by maple and cherry woods. If wood products count then Hardboard covered with a thermofoil finish or 3/4" particle board is right up there too! With a thermofoil finish, hardboard can be shaped and covered to resemble any of the above natural woods. Particle board normally gets a plastic laminate(aka Formica).

I'm a Realtor and the wood I see in most houses is Oak. Pine follows, then Cherry.

oak seems to be used more than any other one kind of wood, unless you want a distressed look, then pine is in order because it is easier to distress than oak.

If you want class you buy Oak
Second best, but very light - Birch
If you want a dark look - Mahogany
Maple has good qualities as well.
