Cookies will remain fresh for about 2 weeks. If you want to give the freshest cookies I suggest about 1 week before Christmas. However if you want to start giving them out now...then absolutely start baking. My family has a group baking the week before though so that on Xmas and Xmas Eve we have nice fresh cookies.

Additionally you could cook them and then freeze them...frozen cookies will last up to 6 months in the freezer.

Many recipes will explain how long the cookies will hold and still be fresh. I think 3 days before CHRISTMAS is the sooniest I would bake cookies, pack them in a sealed container to keep out the air hopefully no one will break a tooth.

Depends on what kind of cookies you are going to make. If it's shortbread, you can bake it now, because shortbread needs time to mature. Anything else might be better waiting for a while. Nice thought, though!

Yes. They will sitting around for a while. Try to wait until the 21st. That way you can spend the weekend delivering them or people picking them up right before Christmas!!

I would wait no earlier than 5 days prior to delivery. If you seal the product tightly you buy yourself more time for freshness.
