Some places probably stilll do, but chefs think that if you kill the lobster first it will taste better because animals release hormones in their bodies when they are panicked that make them not taste as good.
When lobsters boil, their shells make a whistling sound that sounds like screaming, but lobsters cant really scream.

They're only "alive" for a few seconds, the boiling water quickly kills them. It's probably a quicker and more humane death than beheading them, since the boiling water will kill all living tissue in the lobster's entire body within just a few seconds -- every seen a chicken run around with its head cut off? Beheading only severs main nerve stem, it takes time for body systems to die from lack of blood and oxygen.
And no, lobster's don't really feel pain. They don't have a spine or spinal column, their nervous system is very different from humans, and they don't have much of a brain to speak of. They're really just big insects...

Yes they do. That is how fresh lobster is prepared. You can buy living lobster in the supermarket and boil them alive yourself at home. I find it to be a cruel practice. Some claim that lobsters can't feel pain, but that is just silly.

Sometimes the cook will pierce the shell of the lobster with a knife just under the head, which kills it. I'm not sure that's much better than being dumped headfirst into a tank of boiling water, though.

the reason i think they do that is that its the fastest and easiest way to have them be cooked. if you chop off their heads you have to hold the claws out of the way with your hands and they are pretty simple creatures so not sure how far down you would have to cut to get the brain away from the body. and boiling is quick they die instantly so not sure why you are worried about that.

i think they dont bother killing them, i've eaten lobsters that still have nervous reflexes, they kinda move. Well, it depends on the restaurant.
