Or... will they only record what you are watching on TV?

Yes! This is very simple. There should be an "input" section on the back of the DVD recorder. Take a set of RCA cables and run them from the output on the back of your VCR to the input on the back of the DVD player.

Get the Yellow, Red, White cables. Connect those cables to the back of the VCR that says output. Then connect the other end of that cable to the DVD-R that says input. Get another set of cables (whether it be Yellow, Red, White or S-Video or whatever), connect one end of the cable into the output in the DVD-R to the input on the TV. Now, you should be able to watch what you're recording on your TV.

Just a side note, but you might not be able to record VHS film if there's copyright protection on it. There is a device that you can buy at electronic stores that will bypass this problem.
