Simple Christmas Pudding
12 servings
time to make 3½ hours 20 min prep

This simple pudding is easy even if you've never made one before. If you don't have a pudding mold, you can steam it in a metal bowl covered with foil. It has a rich gingerbread flavor and is a very dense dessert. I served it with roast beef and Uncle Bill's Yorkshire pudding and had a lovely Midwestern version of a traditional English Christmas meal.

2 cups plain dried breadcrumbs (canister type ok)
1 cup cherry flavored craisins (dried sweetened cranberries)
1 cup orange flavored craisins
1/2 cup unsulphured molasses
1/2 cup butter, melted
1 teaspoon baking soda
1 tablespoon boiling water
1 1/2 cups apple cider
1 teaspoon ground ginger
1 teaspoon ground cinnamon
1 teaspoon mace
1 teaspoon nutmeg
1 teaspoon ground cloves
1/2 teaspoon kosher salt

1. Heavily butter a pudding mold.
2. Dust lightly with flour.
3. In large bowl, mix together breadcrumbs, Craisins, molasses, and melted butter.
4. Dissolve baking soda in boiling water and add to mixture.
5. Add apple cider and mix well.
6. Sift together dry ingredients and add to mixture.
7. Stir to combine.
8. Place pudding mixture into mold.
9. Top mold with heavily buttered aluminum foil and cover tightly.
10. Bear in mind that pudding will expand some as it steams.
11. Place mold on rack in a steamer or large pot.
12. Add boiling water until the mold is 3/4 of the way submerged.
13. Cover and steam for 2 1/2 to 3 1/2 hours.
14. Pudding will be firm when done.
15. Serve warm with a vanilla sauce or hard sauce.

Here's a ''MICROWAVE'' version

Microwave Christmas Pudding

Mix together in a large bowl:
8 oz flour
6 oz fresh breadcrumbs
8 oz suet
2 lb. chopped dried fruit, sultanas, raisins, dates, apricots,
figs, cherries, candied peel, crystallised ginger, etc
3 teaspoons mixed spice
1 grated dessert apple
1 grated cooking apple
1 grated carrot
1 orange, grated rind
1 lemon, grated rind
1 lb. sugar [or 12 oz sugar with the dry ingredients
and 2 tablespoons treacle with the liquids]

Beat together in a basin:
juice of the orange and the lemon
1/4 pint milk stout
2 tablespoons milk
4 eggs

Mix the liquids thoroughly into the dry ingredients

Divide the mixture between 3 x 1 pint basins and 2 x 3/4 pint basins, making 5 puddings in all.

Cover each basin with cling film and pierce it once.

Microwave individually on high [based on a 600 watt oven]

3 1/2 mins for the 3/4 pint size

Stand for 10 mins before turning out

Serve hot with custard or cream

Reheat an individual pudding for 2 mins or 1 min per portion.
