This won't help for today, but whenever I make pancakes, french toast or waffles I make a large batch, cook it all up. Let everything cool, then put a serving in a baggie, put them all in a large freezer bag and freeze them. Then when I am in the mood for whichever I can pull it out of the freezer, heat it up and breakfast is ready.

For everyday, I make enough oatmeal to have enough for me for the week (5-6 servings). Portion it out into those gladware bowls and I have breakfasts that are ready to warm up in the microwave.

Scrambled Tofu on Toast

Ingredients

half a box of tofu
knob of margarine
soya milk
black pepper
herbs
bread
1 tsp vegan boullian powder

To make the scrambled tofu take the tofu out of the packet and mash up with a fork or potato masher. Mix with a dash of milk. Then put on the heat and add a knob of margarine. Once the margarine is melted and all ingredients are mixed together season with the black pepper and herbs. Add the vegan boullian powder if you like it to look more yellow and have a more salty taste.

Once the tofu is heated thoroughly serve on toast and add extra black pepper.

It is best if you continually stir this recipe to prevent sticking.

egg muffin: start frying a little butter/marg in small fry pan. Put english muffin down in toaster. Get out a slice of cheese (american melts fast) get out a thin slice or two of ham. When egg is done, place on eng muf. which has likely popped up. place cheese slice on hot egg. Heat the slice(s) of ham until hot, place on top of egg/cheese. Sounds complicated but if you have your ingredients w/in easy reach, takes only a few min and is satisfying, tasty, and nutritious. I do not butter the eng. muf. there is enough on the egg and ham after cooking. Also cheese has enough fat-even if you use 2%.

Scramble and egg while you are toasting a piece of bread in your toaster. Put egg on top of toast, sprinkle with cheese, and viola! Instant breakfast.
