Probably the same that's in bologna -
mechanically separated chicken, pork, water, corn syrup, salt, beef, 2% or less of the following: modified corn starch, potassium lactate, sodium diacetate, flavorings, sodium phosphates, sodium erythorbate, sodium nitrate.

I live in the middle of Iowa and there is a pork plant in my town. The common saying about hot dogs is that they are "made of everything but the squeal."

If it isn't ham, bacon, roast, hocks - then it goes into the hot dog and I am including lips, eyes and orifices.
