Best way to travel is by MTR to both destinations about
45 mins. to Wanchai but Shatin takes a bit longer
because you have to switch to a train from Kowloon
Tong station. Its the most convenient mode of transport
and most economical. About US$10. or less then HK$80
MTR (Metro Rail) train (KCR)..

Being your 1st visit and assuming you will be visiting all the major attractions etc etc. Wan Chai is a much better location as it is just about downtown on the island side. Shatin belongs to the New Territories. It's considered suburb and requires much more commuting to most of the attractions.
Airport to Shatin is about 1 1/4 hour while Wan Chai is about 45 minutes. Also, Wan Chai is far more english friendly than Shatin when it comes to shops, restaurants, hotels and bars. The only drawback is the price, as Wan Chai area will cost more for accomodations, anywhere between 30-50% for similar rooms.
