Deep fried Brie in breadcrumbs is excellent served with redcurrant jelly, side salad and french bread. Use the olive oil as a dressing for the salad. Enjoy!

Oh you just have to try this. It's so elegant and your guests will rave on and on. Make crostini out of your french bread.
Brie and Chambord
1 (8 ounce) brie round
1/4 cup dried apricots
1/4 cup chopped granny smith apples
2 tablespoons toasted pecan pieces (chopped)
1/2 teaspoon lemon zest
1/4 cup orange juice
1/4 cup apple juice
1/2 cup Chambord raspberry liquor
2 tablespoons sugar
Peel and chop apples. In saucepan, add all ingredients except Brie.
Simmer and stir occasionally over medium heat until thickened and fruit is tender. Cool.
Slice Brie through center, making two round disks. Spread the cooled filling between the layers.
Bake at 350ºF for 10 minutes. Remove and let set for 5 minutes.
Drizzle with Chambord and serve with good quality crackers or crostinis.
Give yourself about an hour for prep time.

Buy some bacon and red wine, cut up the french bread and make BLT's with Brie and side salad washed down with the red wine.

I would heat some of the brie up and get it all gooey and dip fruit in it...you could also dice it up and put it in salad....you can also see if it will go well with some desserts since it is so creamy and sweet.

U can bread crumb it in small wedges and deep fry it, serve with redcurrent jelly/sauce.... MMmmmmMMMMmmm
