It's a Mexican sausage that is made of every part of the pig you wouldn't eat if it weren't in a sausage. It's very spicy. It's quite tasty browned (well, turned a cooked shade of that bright red, anyways) and mixed with cheese and scrambled eggs in a breakfast burrito. There's actually a lot of things you can do with it, but keep in mind - it is very spicy.

At the Mexican markets chorizo is more the consistency of Italian sausage, but the stuff found at chain grocery stores (which I prefer) cooks into a very loose saucy blend that is great for blending into eggs. Some people use it in tomatoe dishes and I saw a chef on TV using it for a cooking base / sauce for oysters and clams.

It is spanish for sausage. Highly spiced sausage. I lived in Laredo, TX for 4 years, one of the many fabulous dishes I was delighted to eat there was chorizo con queso. Hot spicey sausage done in a small crock with cheese and served in a tortilla (flour or corn). Add other fixins and mmmm mmmm good

It is Spanish seasoned sausage. I've had it as an appetizer in Portuguese and Cuban restaurants. It is also added to rice dishes.
