Buttered New Potatoes with Rosemary
2 lbs tiny new potatoes, red skinned, scrubbed
2 tablespoons fresh rosemary leaves
1 bunch scallions, chopped
1/2 cup unsalted butter
salt, to taste
pepper, to taste
Cut potatoes in half and saute them in butter in a heavy, nonstick, large saute pan, Dutch oven or electric skillet, until golden and beginning to crisp on the outside, about 25 minutes.
Add the rosemary and scallions to the pan and stir well. Saute contents gently for another 10-15 minutes or until potatoes are tender.
Season, to taste, with salt and pepper and serve warm.
Presents well 8-12 servings.
Cauliflower Parmesan
1 large cauliflower
4 tablespoons butter
1/8 teaspoon dried basil or oregano
1/4 cup grated parmesan cheese
1/4 cup breadcrumbs (i'm sure you can use either plain or italian bread crumbs I use plain)
Wash and trim cauliflower; break into flowerets.
Cook covered in a small amount of boiling salted water, 10-12 minutes.
Melt butter in small skillet; stir in basil or oregano.
Drain cauliflower well.
Pour melted butter over cauliflower; toss lightly.
Add grated Parmesan cheese; toss lightly until cauliflower is coated with cheese.
Sprinkle bread crumbs over cauliflower before serving.
It's easy to make and tastes great. This serves 4 you probably want to double.

any rice dish compliments duck, depending on how the duck is prepared;
WILD RICE SIDE DISH
1 c. uncooked wild rice
1 (10 1/2 oz.) can condensed consomme (undiluted)
1/2 lb. mushrooms, sliced or 1 can sliced mushrooms, drained
1 tbsp. butter
Wash rice. Place in greased 1 1/2 quart casserole. Add consomme. Let stand overnight or for several hours. Bake covered at 350 degrees for 45 minutes, adding a little water if rice becomes dry.
Meanwhile, saute mushrooms in butter until tender. Stir into rice. Rice should be moist with all liquid absorbed.
(A nice side dish with game and poultry.)
SIDE DISH RICE
2 tbsp. butter
Salt
3 c. water
1 1/2 c. long grain rice
1 lb. mushrooms, sliced
2 tbsp. butter
2-3 green onions, chopped
1 sm. pkg. slivered almonds
Bring water to a boil, add salt and butter. When full boil, stir in rice, turn down heat as low as possible. Steam approximately 20 to 25 minutes until fluffy. Saute mushrooms in butter. Mix steamed rice, mushrooms, almonds and green onions together. Serve with fish, chicken or duck.

Keeping it simple, I suggest the same foods that complement roasted turkey -- mashed potatoes (to keep it simple, leave the skins on), any kind of salad (caesar, spinach, fruit, cranberry, your personal favorite), homemade bread, a vegetable side.
Easy vegetable side: Slice a zucchini into 1/4" rounds (precision measurements are not essential). Cut a yellow squash into 1/2" chunks or strips. Finely chop one small onion or 1/2 of a large onion. Heat a small amount of oil in a hot skillet or wok. Add the vegetables and 1 tablespoon or more of fresh rosemary, dill or basil. Stir while it cooks until the onion is transparent -- one or two minutes. Serve hot.

i don't know what your different section dishes are, yet given the heaviness and oil content fabric of the duck, we would oftentimes serve some basmatti rice with prunes or dried apricots. very very nearly any fruit is a physically powerful palette cleanser, even apple sauce. different stable sides are sauteed asparagus, in sesame oil and butter, and sprinkled with toasted sesame seeds.

Simple white/brown steamed rice and a plum sauce would compliment the duck. Some simple steamed vegetables do nicely as well. Try to stick with fresh vegetable; they will make your presentation look better.

Duck is very rich (fatty, greasy) so have citrus side dishes that will cut the fatty taste. Skip buttery and oily items.

duck is on the greasy side, so I'd suggest frozen veggies with melted cheese, a fruity salad, and candied yams or mashed potatoes, with hot rolls. Merry christmas!

In the superstore, fruits are usually selected much too soon. Some are rocks, many are wrong. Some of the fruit and vegetables are generally right (zucchini, onions, garlic, lettuce, greens, and a few others) so I'd have to go with vegetables.
