I have a ton of oregano that I grew over the summer, and I also have a boyfriend who is diabetic so I was just wondering about recipes.....

Make a Caprese Salad!!!!!

Slices of Mozerrella Cheese
Slices of Roma (or other flavorful) tomatoes
Drizzle with extra virgin olive oil
Garnish with oregano

I do this kind of cooking 'to taste' so I don't have exact quantities, but I do make this really good citrus pork that uses oregano.

Take a piece of boneless pork and trim the fat. Cut into cubes and drop into slowcooker/crock pot. Throw in an onion or two, sliced, a couple cloves of chopped garlic, some salt, some cumin and some oregano. Squeeze equal amounts of orange and lime juice to cover meat and onion. Cook on 'high' until very tender. Lift meat and onion out of broth with slotted spoon to serve. Serve with additional wedges of fresh lime to squeeze over meat.

I usually serve this with tortillas, beans and rice. I think your BF can have the beans, but the tortillas and the rice are going to have to depend on his overall diet and blood sugar readings.

Great recipe from Jill Prescott that I tried with oregano & Grapeseed Oil
Lemon Pepper Grilled Artichokes with Goat Cheese and Lemon Mayonaisse

These are excellent on an outdoor grill, on an stove top grill or even baked in the oven. Plan ahead when making this recipe. The artichokes are best when marinated for 4 hours but 2 will do. This homemade lemon mayonnaise may be held for 1 day.

Ingredients for the artichokes:
4 large artichokes, rinsed well, top third removed, and leaf tips trimmed
1/4 cup salt, for the cooking water
1 lemon, cut in 1/2 for rubbing the artichoke
Ingredients for the marinade:
1 cup grapeseed oil
juice of two lemons for the marinade
3 cloves fresh garlic, minced
¼ cup chopped parsley leaves
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
Garnish:
4 ounces herbed goat cheese, crumbled

Procedure:

1.Fill a 7-8 quart pot 3/4 full with water. Add the 1/4 cup of the salt and bring to a boil.
2.Cut one fourth of the top of the artichoke off. Rub the trimmed leaves and bottoms of the artichokes with one of the lemons. Drop the lemons into the cooking water. Weight the artichokes so they are submersed in the water using a bowl or plate to hold them down. Simmer until the artichoke base can be pierced with a knife and an outer leaf can be easily removed. Drain the artichokes upside down in a strainer or colander until cool enough to handle.
3.Gently squeeze the excess water out of the artichokes. Cut them into quarters and scrape out and discard the purple leaves and hairy choke. Dry carefully with paper towels.
4.Combine the grapeseed oil, sliced lemon, vinegar, garlic, parsley, salt, and pepper in a shallow baking dish. Add the artichoke quarters and toss to coat. Let marinate for 2 to 4 hours at room temperature, turning occasionally. Make the mayonnaise.
5.Preheat the grill to medium-high or heat the oven to 375.
6.Remove the artichokes from the marinade and grill, turning, until warmed through and barely charred around the edges, about 5 minutes.
To serve: Place artichokes on a large serving platter and top with the crumbled goat cheese. Drizzle with the grilled lemon mayonnaise and serve additional mayonnaise on the side for dipping the artichoke leaves.

Grind the oregano add some ground thyme and a little salt, place in beautiful jars and give as EXTRA gifts at Christmas with a nice bottle of imported olive oil.

Is the oregano you grew ACTUALLY oregano (like the kind grown in Greece) or is it Mexican Marjoram? If it is the first type, find recipes that call for herbs with a "bite"- or "spicy" herbs. Good luck!
