Generally we shy away from seeing ourselves as 'MEAT' - but we are. There is no gustatory reason for choosing human meat over cows meat or pigs meat... it is just as indigestible.
In some cultures it is called 'Long-Pig' as we are genetically very close to pigs, and - apparently - a similar taste (and have a similar average intelligence, most of the time).
Although people who each sheep or cows would probably think it too disgusting to contemplate eating human meat, it has been done (the aforementioned Andes football plane crash as just one example). So the only really thing that might happen would be how our society viewed the action.
To eat the heart of an enemy warrior might be seen as a good thing after a victorious battle.... and I'm sure it has been done in the past.
To eat the bones of the tribe's Shaman will also have been practised to pass on the knowledge - either eaten by all or by the new initiate in order to show the tribe that the lineage continues....
Nowadays you would be seen as some kind of monster and locked away or executed (think on what happened to that German guy who advertised on the Internet for someone to be eaten by him... he even found a willing participant! Yikes!)

Apart from being considered a cannibal and jailed. He/She could develop the "human version" of the Mad Cow disease. A variety of the Creutzfeldt-Jakob disease. But it would take up to 50 years to develop it:
"In The Lancet (June 2006), a University College London team has suggested that it may take more than 50 years for vCJD to develop, from their studies of kuru, a similar disease in Papua New Guinea 1. The reasoning behind the claim is that kuru was transmitted through cannibalism in Papua New Guinea when relatives would eat their dead relative's brains as a sign of mourning. In the 1950's, the practice was banned, thereby preventing any further possible transmission. In the late 20th century, however, kuru has reached epidemic proportions in certain Papua New Guinean communities, therefore suggesting that vCJD may also have a similar incubation period of 30 to 50 years.
These researchers noticed a genetic variation in some kuru patients that has been known to promote long incubation periods. They have also proposed that individuals who contracted CJD in the early 1990's represent a distinct genetic subpopulation, with unusually short incubation periods for BSE. This means that there may be many more vCJD patients who have longer incubation periods, which may surface many years later"

Then that would officially categorize them as a cannibal and would probably be wanted by the F.B.I. But , I remember hearing about Jeffrey Dahmer eating some of his victims and it put him in a state of euphoria. I guess it might depend on the situation.If you were forced to eat it , I would think you would get sick.

Other than going to jail, you could go mental depending on what you ate. Mad cows desease was started in the UK because the cows were feed the bits humans dont eat
